Deliciously rich peanut butter cookie bars are studded with mini chocolate chips and topped with chocolate frosting. These are quite rich, so you might want to cut them a bit smaller than usual.

Ingredients:
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup smooth peanut butter
- 6 Tablespoons (3/4 stick) butter, at room temperature
- 3/4 cup firmly-packed brown sugar
- 1/2 cup granulated white sugar
- 2 eggs, lightly beaten
- 2 teaspoons vanilla
- 1/2 cup miniature chocolate chips
- 1 cup semi-sweet chocolate chips
Preparation:
Preheat oven to 350 F. Line a 9 x 9-inch baking pan with non-stick foil.In a small bowl, whisk together flour, baking powder, and salt. Set aside.
In a medium bowl, beat peanut butter, butter, brown sugar, and white sugar with a large fork. Add eggs and vanilla, beating until combined.
Add the flour mixture to the wet ingredients, mixing until combined. Fold in miniature chocolate chips. Pour into prepared pan and bake for 25 to 30 minutes.
Sprinkle semi-sweet chocolate chips on top of the hot peanut butter bars. Let rest about 3 minutes, then smooth into a frosting with a spatula.
Cool to room temperature before cutting into bars. These are quite rich, so you might want to cut them a bit smaller than usual.
Yield: about 24 bars, depending on cut size
