A rich crunchy peanut butter cookie layer is topped with peanut butter-flavored chocolate and marshmallows. What's not to love? These cookie bars are fast and easy to make.

Ingredients:
- 1/2 cup butter
- 1/2 cup shortening
- 1/3 cup crunchy peanut butter
- 1 egg
- 1 tsp pure vanilla extract
- 1-1/4 cups brown sugar, firmly packed
- 2-1/4 cups all-purpose flour
- 1/2 tsp salt
- Topping:
- 1-1/2 cups semi-sweet chocolate chips
- 1/4 cup crunchy peanut butter
- 1-1/2 cups miniature marshmallows
Preparation:
Preheat oven to 350 F. Line a 9 x 13-inch pan with non-stick foil.In a large bowl, cream butter, shortening, peanut butter, egg, and vanilla. Beat in brown sugar. Add flour and salt, beating until combined.
Press peanut butter cookie dough into an even layer in the prepared pan. Bake 15 to 20 minutes, until lightly browned. Do not overcook. Let cool while you prepare the topping.
For the topping, heat the peanut butter in the top of a double-boiler until warm. Add the chocolate chips, stirring until melted. Remove from heat and let cool slightly, then spread on top of cookie layer. Sprinkle with marshmallows, pressing them gently into the chocolate so they stick. Refrigerate about 20 minutes to set chocolate.
Cut and serve peanut butter cookie bars at room temperature.
